Mocha Cupcake With Mocha Buttercream Frosting

I love the flavor of coffee and chocolate combined. Actually, I never forget to include a Mocha Mamon when I do the grocery. This inspired me to bake a batch of mocha cupcakes last Valentine’s Day. I was glad to because I enjoyed the mocha buttercream frosting I made. Here’s the recipe in case you will be craving for a mocha cupcake with a decadent mocha buttercream frosting.

Ingredients:

For the cupcake :

2 cups Super Sponge Cake Mix (I used RedMan)
5 eggs
1/4 cup melted butter
1-2 tbsp of roasted coffee diluted in 1/4 cup water

Mix everything and whisk at medium speed from 5-10 minutes until mixture is fluffy and double the size. Bake at 175C for 20-30 minutes or till the cupcake is done. Use toothpick method to check. Take them out of the oven and let them cool.

For the frosting:

1 stick soft butter
1 cup confectioners sugar
2 tbsp roasted coffee diluted in 2 tbsp water
1/2 cup sweetened cocoa
1 tsp vanilla

Mix everything and whisk from 5-10 minutes high speed. Pipe over your mocha cupcakes. You can also cool the frosting first inside your refrigerator for an hour or two if you want the frosting to be more firm. Enjoy!

My eldest specially loved these cupcakes and I was so happy because she’s not easy to please, specially with cupcakes!
