Yogurt Zucchini Pasta Recipe

This is a healthy no-meat pasta recipe where you can use your favorite pasta, add some zucchini, and yogurt as a healthy alternative to whole cream as pasta dressing.

  • 125 g spaghetti pasta (or any type of pasta you like)
  • ¼ cup plain California Greek Yogurt
  • ¼ cup Parmesan cheese
  • 1 tsp lemon extract

salt and pepper for seasoning

  • 2 tsp virgin olive oil
  • 1 pc zucchini (cut into lengthwise strips)
  • 1 tsp garlic powder
  • 10 pcs cherry tomatoes
  1. Fry zucchini in olive oil and mixed in garlic pepper and cherry tomatoes for 5-10 minutes until thawed and cooked.

  2. Mix together Greek yogurt, cheese, lemon and salt and pepper

  3. Mix the yogurt mixture, zucchini, pepper and tomatoes with the pasta

  4. Serve while hot.
