My pantry contains cheese all-year round and I know many moms who also include cheese and other dairy products in their weekly grocery. Dairy is no doubt a staple, and now many products, brands and packages are making their way to local stores. Which one should we choose? For caring moms like us, we always choose the top of the line, and fortunately it’s easy to spot those ones because they have a seal: Real California Milk.

Northern California’s climate offers a lot of pasture-based grazing while in sunny Central and Southern California, farms use free stall barns. Fans and misters keep the cows cool, and they have access to shade, food and water 24/7. Dairy farmers throughout the state ensure that the cows are healthy, comfortable and safe as cows that are under stress typically produce little to no milk at all.

California now ranks first in the US for total milk production, and for producing butter, ice cream, non-fat dry milk and why protein concentrate. It ranks second in yogurt and cheese production, but leads in the production of Mozzarella, Cheddar and Monterey Jack cheeses.

One of my favorite dishes which can’t be perfected without delicious cheese slices is the chicken cordon bleu. And you know, it was my eldest who cooked this dish at home for the first time. It’s so easy to prepare and I’m sure your kids will love it too. It’s a complete meal in itself and can be eaten anytime of the day.

5-step Chicken Cordon Bleu Recipe

  • 4 pcs medium sized chicken breast fillet (make them thinner by using a chef’s mallet or rolling pin)
  • 2 pcs medium egg (beaten)
  • 4 thin slices cheese (preferably with Real California Milk or Real California Cheese seal)
  • 1 pcs ham (cooked)
  • 1 cup bread crumbs
  • 2 tbsp cooking oil for frying

salt and pepper for seasoning

    1. Season breast fillet with salt and pepper.

    2. Layer one breast fillet with a slice of ham and cheese

    3. Roll the fillet/ham/cheese. You may use a toothpick to keep the rolled slices in place.

    4. Dip the roll in beaten egg and then to bread crumbs. Do this twice.

    5. Fry the rolls in cooking oil and then slice before serving.

    This recipe is very easy to prepare and will be a perfect school “baon” dish for your kids!
