Butter Cupcakes – My Ode To Women

Today March 8 is International Women’s Day and because I admire many women and I also strive to live up to my full potential, and most of all because my kids are at home and I have time in my hands (thank God to all of these, we are also healthy) I thought I’d bake some cupcakes which will be my ode to motherhood and to all deserving women out there.

Butter Cupcakes Recipe

Actually, in this recipe, I cheated because I used a prepacked cake mix Maya Butter Cake Mix. Instead of making a butter loaf, I made cupcakes! (or muffins because technically, the ingredients are meant for a bread. But since I dusted powdered sugar as topping, I consider these as cupcakes.

Ingredients:

  • 2 packs of Maya Butter Cake Mix
  • 4 eggs
  • 8 tablespoon butter
  • powdered sugar for dusting
  • 12 cupcake liners

Pre-heat oven 375F 10 minutes. Mix all ingredients gently until thoroughly mixed. Fill up 1 dozen cupcake liners and bake for 10-15 minutes or until done. Make sure to check from time to time so as not to burn your cupcakes. When done baking, the cupcakes out and let them cool down on a wire rack. Dust with powdered sugar before serving.

What I love from these butter cupcakes is that they can be eaten as is, or you can add whipped cream, fresh fruits or jams.

Made these simple butter cupcakes as an ode to motherhood and all women out there who simply work with their best to make everything all right at home or wherever they are, simple but sweet, uncomplicated, a little bit burnt here and there, and yet always strive to be filling.

Happy international women’s day and despite the crisis we are all facing these days, just continue being the great women you are, the light of homes, the strength of the weak, the butter in the bread.
