… then this recipe is for you.
ECQ definitely brings out our creative juices when it comes to food. Who wouldn’t? Sweets are our happy pills as we strive to keep up our sanity till this whole coronavirus crisis is over.
In this recipe, I tried to keep it simple and cheap as possible. One, instead of using flour, I used a less-expensive cake mix and instead of using marshmallow fluff, I used my stock of large marshmallows. Then I also used the chocolate bar for baking I got from last Christmas.
Here’s the easy recipe:
Ingredients:
1 pack cupcake/cake mix 200g ( I used Maya Celebrations by Sharon party cupcake mix that you can bake using conventional oven, oven toaster or steamer)
2 tbsp soft butter
1/2 cup water
1 medium egg – beaten
1 cup chocolate milk (melted in oven using 1/4 cup milk)
crushed graham crackers
large marshmallows
Hershey’s or any chocolate tin bars
1. Pre-heat oven to 177C
2. Line 1 dozen hole muffin tins with baking cups.
3. Blend cake mix and butter in a bowl untile coarse meal. Add in water and egg.
4. Mix in melted chocolate. Mix with spatula until smooth.
5. Fill up muffin tins 3/4 full with batter mixture.
6. Bake for 15 minutes.
7. Remove from the oven and let the muffins cool for 5 minutes.
8. Using a pointed knife or if you have an apple corer, carefully make a hole in the middle of each cupcake enough to fit in a marshmallow.
9. After filling in each cupcake, bake the cupcakes again for 3 minutes.
10. Now the marshmallows are slightly toasted and soft. Using a spoon, flatten the marshmallows and put a thin slit in one of the sides of the marshmallow where you can put your Hershey’s or chocolate thin bars.
11. Sprinkle a generous amount of Graham cracker crumbs over the cupcakes.
12.Slide in your chocolate tin bars.
13. Let the cupcakes cool a little bit before serving.
