Which food are you craving most for during the quarantine days?
Me, popcorns in tubs! And my kids feel the same. We miss Chef Tony’s popcorn so much that it inspired me to have a busy day with my baking tools. And because I have some lovely Real California Cheddar Cheese, I decided to make cupcakes with loads of cheddar cheese and some popcorn stuffing on top, drizzled with salted caramel. Have you tried cupcakes with popcorn toppings yet? It’s so good! Cheddar cheese with caramel is just a perfect tandem because their flavors just balance each other. Salty, tangy, rich and sweet. Plus the textures are crazy – fluffy, soft, smooth, crunchy and crumbly, imagine all those flavors bursting in your mouth while you eat these treats.
Here are the ingredients and how to make them.
Ingredients:
Cupcake
- 95g (1/2 block) shredded Real California Cheddar Cheese
- 1/2 stick softened butter
- ½ cup sugar
- 1 egg
- ¼ cup milk
- 1 teaspoon vanilla extract
- ¾ cup all-purpose flour
- ¾ teaspoon baking powder
- ¼ teaspoon rock salt
Frosting
- 1 stick soft but cold butter
- 1 tablespoon caramel sauce (store-bought or homemade)
- ½ teaspoon vanilla extract
- 1½ cups powdered sugar
- 1 tsp milk
Cooked salted popcorn
How to make
- While the oven is preheating, you can mix the cheese, butter and sugar using your mixer paddle.
- Add flour, baking powder, and salt and mix together. Careful not to overmix.
- Bake cupcakes for 10-15 minutes 350F.
- Stick toothpick in one of the cupcakes to make sure that it’s already baked and if they are, remove from the oven and let them cool.
- Let the cupcakes cool before making the frosting.
- Mix all the ingredients for your frosting using your mixer.
- Add your frosting to the cupcakes.
- Top the frosted cupcakes with popcorn and drizzle with caramel.
Why use Real California Cheese? Because they are high-quality cheese and you can easily taste the difference. These cheddar cupcakes are cheesy and salty and sweet and they can easily be party favorites, but I doubt if I can make them as cheesy if I did not use Real California Cheddar cheese.
