Prepared low-carb breakfast today and I’m sharing this recipe for a healthy scrambled cauliflower (bacon is completely optional). Instead of fried rice, I found out that cauliflower is a great alternative and you will feel fuller faster.
If you are usually in a hurry in the morning, I suggest boiling your cauliflower the night before and mash it already, ready for mixing and frying come breakfast time.
Ingredients:
1 cauliflower head (remove the florets, boil, and mash)
1/2 cup cheddar cheese
1/4 cup parmesan cheese
1/2 teaspoon cayenne pepper or if you don’t have one, you can use chili flakes or chili powder depending on the kick that you desire
Toppings: you can choose to add bacon, parsley or caramelized onions or sliced onion leaves
To make this dish, just mix everything together. Fry in a frying pan using olive oil or butter till cooked.
Add your favorite toppings and serve hot.
Cauliflowers is one of the best alternatives to rice because of its similar taste and texture. Plus it has lower carb count : 1 cup of cauliflower 26 calories while 1 cup of white rice has 100 calories. Amazing right?
