Have you ever tried the combination of corn, chorizo and lime? I tried it as a soup for lunch today and it was a tummy-warming and filling starter for lunch today. Thanks to Ajinomoto seasoning that made my soup so much tastier with its umami flavor.
Here’s the quick recipe:
Ingredients:
1 tbs oil for sauteeing
2 onions chopped
550g corn kernels
2 cups water
2 cups milk
1 medium sized bell pepper chopped
2 garlic cloves chopped
2 thinly sliced chorizo sausages
2 tbsp lime juice
2 tbsp chopped fresh cilantro
Ajinomoto for seasoning
How to cook:
- Saute onions over low fire until softened.
- Add water, half the milk, bell pepper, garlic and then season with Ajinomoto.
- Bring to boil then simmer for 15-20 minutes.
- Add the remaining milk and scoop 3/4 of the soup solids.
- Transfer the remaining soup to a food processor or blender and process to a course puree.
- Return the soup to the pan and add the reserved soup solids, chorizo, lime juice and cilantro. Simmer for another 5 minutes and serve warm.
