My husband loves to buy pandesal (salt bread) in the morning for breakfast, and we always have these left over stale bread. So I found the way to use them. Here’s a simple but for me the best banana bread pudding you will ever taste.
Ingredients:
5-6 stale pandesal or salt bread or you can also use
1/2 cup melted butter
Liquid mixture (prepare all these, whisk and mix together, careful with smashing the bananas, use firm bananas as much as possible)
2 eggs
1 cup milk
1/2 cup brown sugar
1/2 tsp cinnamon
1 tsp vanilla
1/4 cup raisins or as many as you like
2 medium sized bananas sliced
For the sauce:
1/4 cup butter
1 tsp cornstarch
2-3 tbsp corn syrup
1/4 cup milk
How to make:
Pre-heat oven to 180C
Spray or grease your baking casserole
Pull apart your stale bread into bread cubes and toss them in the casserole.
Pour melted butter over the bread.
Pour liquid mixture and then mix altogether using your clean hands.
Bake for 20-30 minutes until the bread turned brown and the liquid slightly dried out.
Remove from oven and let it cool while you prepare the sauce.
To make the sauce:
In a sauce pan, melt the butter.
As soon as it starts to melt, add the cornstarch and keep on whisking.
Add milk and corn syrup and keep on whisking until you make a smooth sauce. Remove from heat.
Top your banana bread with sauce before serving.
