Rainy days inspire me to serve soups daily. I also feel that we have gained weight so much from this pandemic that some sort of liquid diet will help. It also helped a lot seeing my favorite celeb Heart Evangelista on how skinny she is because of her soup diet. Not that I’m too keen on learning what soup diet is it but more of, I wanted to add more nutrients on what we eat these days. Soups are the easiest dishes to make and can make you feel full in an instant.
So this is my recipe for curried carrot soup (combining healthy carrots with one of my favorite spices – curry!) I’ve added some nutritional facts down below to better appreciate this recipe.
Ingredients:
1 tbs for sauteeing
1 medium onion sliced
300g carrots chopped
curry powder 1/2 teaspoon
2.5-3 cups chicken broth
1 tsp calamansi or orange juice
salt and pepper to taste
How to cook:
- Saute onions and then add the curry powder, carrots and chicken broth.
- Bring to a boil and simmer until the carrots are tender.
- Remove from heat and then add the calamansi juice.
- Puree the mixture using a food processor or blender until smooth.
- Add salt and pepper to desired taste and serve warm.
2.5 cups of chicken broth made my curried carrot soup a little bit thicker than I wanted it to be but my youngest daughter liked it this way and I saw her ladling it over her rice. I was so glad that she loved this soup because carrots can really help her eyesight.
