There’s nothing quite like spending a day learning new recipes and flavors with friends, and our recent cooking class at The Maya Kitchen Culinary Arts Center was exactly that! With my two friends, Cecil and Ching, we signed up for a Caribbean cooking class, excited to explore the vibrant world of spices and tropical ingredients.
Led by the talented Chef Albert Sia, the class focused on four flavorful dishes: Peruvian Chicken Aji Verde, Sta. Dominican Beef Short Ribs, Cajun Prawn Taquitos, and Jamaican Swordfish with Tropical Salsa. The recipes sounded a bit intimidating at first glance, but Chef Albert had a natural way of guiding us through every step, breaking down each part of the process. He was so patient with us, answering questions and demonstrating techniques, making what seemed complex at first much more approachable.
We began with a detailed lesson on preparing ingredients – from selecting fresh produce to learning proper cutting techniques. As someone who loves cooking for family but often sticks to familiar Filipino dishes, learning how to use spices and flavors from the Caribbean was so refreshing. Chef Albert even taught us how to adjust spices to suit our personal tastes, which was especially helpful!
Working alongside friends, especially in a hands-on class like this, was just so much fun. I loved watching Cecil master the art of seasoning while Ching became a pro at using a chef’s knife – both of them quickly picking up skills they said they’d never tried before. There was also a French couple in the class with us, adding a nice international flavor to the experience. The class felt like a little melting pot, bringing together people from different places with a shared love for food.
Out of all the dishes, the Peruvian Chicken Aji Verde stood out for me. The flavors were bold yet balanced, and the sauce was something I’d never tried before – fresh, tangy, and with a hint of heat. The Sta. Dominican Beef Short Ribs were also a hit, perfectly tender and packed with flavor. When it was time for the Cajun Prawn Taquitos and the Jamaican Swordfish with Tropical Salsa, we were all eager to put our skills to the test. The best part? Sitting down afterward to enjoy the food we had all worked so hard to prepare. We shared stories, laughter, and, of course, amazing food.
