It’s a rainy Saturday today and these are the kinds of days when I simply offer a prayer that we’ve got roof over our heads and that everyone will be within God’s grace to have one.
To break the lazy feeling from the chilly weather, I thought to use this Pili&Pino Chocolate Granola mix I’ve been keeping for so long. It’s a 460g cookie mix made with vanilla-infused coconut sugar.
Granola includes: rolled oats, cashew nuts, pumpkin seeds, toasted coconut, wheat germ and coconut nectar syrup. Aren’t these wonderful? These ingredients are healthy so I thought the cookies will be good for my kids too
Using this cookie mix was very easy because you just need to have butter and egg. There’s a procedure at the back of the packaging and to my surprise, the cookie mix was fool-proof. Why did I say that? Because I wasn’t able to follow the direction of creaming the butter and egg before adding the mixture. I wasn’t able to warm the egg I used and the butter did not melt enough to room-temperature which were the ideal requirements usually when baking cookies.
Because there was no turning back since I only got 1 pack of this mix, I just went ahead, mixed and baked. The cookies were baked perfectly! The coconut flavor mixed with chocolate was delicious and in harmony with the taste of walnuts.
I topped the cookies with cookies and cream ice cream while the cookies are still hot. There’s nothing like eating warm cookies with ice-cream on top. If you haven’t tried it before, you are missing half of your life.
