Trail Mix Oats Cookies Recipe

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup melted coconut oil
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup trail mix (choose your favorite combination)
  • Optional: dark chocolate chips, dried fruit, shredded coconut

Instructions:

  1. Mix the dry ingredients in a bowl. Set aside.
  2. Mix the wet ingredients in a separate bowl.
  3. Mix the dry and wet ingredients together.
  4. Scoop around 2 tbsp of cookie dough and form cookie dough balls.
  5. Bake the cookies for 10-15 minutes at 170C.
  6. Careful not to over bake as oats easily dry up and get brown.
