I just found out that a very good alternative to ground beef when serving tacos is corned beef. But the secret to delicious corned beef tacos will be, of course, the main course, the corned beef. Have you tried Highlands Gold made with 100% Pure Beef – not the ordinary kind of beef, but Angus Beef!

In this recipe, I used Highlands Gold and I’ve got to tell you that this will surely be a hit to any kind of party that you will bring your tacos to ( I can think of a swimming party, a movie watch party, or maybe as a school potluck).

What I love about Highlands Gold Corned Beef is that the meat is so flavorful, tender, and not greasy. The flavor is high-profile and doesn’t have that chemical taste like in other brands I’ve tasted. In this recipe, I don’t have to use any seasoning at all (except for pepper which I can’t do without in any kind of dishes I cook). Highlands Gold tastes expensive but it’s actually affordable with the price of P65 for 100g size.

Ingredients:

1 pack of crispy tacos
2 cans of Highlands Gold Corned Beef
1 medium pc onion finely chopped
ground pepper
2 pcs of ripe avocado
5 tbsp sour cream
5 medium pcs calamansi
salt for seasoning the cream

How to prepare:

  1. Sautee corned beef in onions.
  2. Cook in slow heat for 10 minutes until the liquid dries out. Add pepper as desired.
  3. Prepare the sauce while cooking by extracting calamansi juice and combine it to sour cream.
  4. Season cream with salt.
  5. Slice avocado into thin pieces like in the photos, it will be best to have the avocados chilled before serving.
  6. Top cooked corned beef on tacos, then the avocado slices and the sauce.
  7. You can also serve the tacos, corned beef, avocado slices, and cream sauce separately. This way the tacos stay crispy and guests can decide how they can do their own tacos.
