Most of my recipes in this blog use eggs because who doesn’t love eggs (unless you are allergic) – it’s easy to cook, versatile, and one of the cheapest and convenient protein sources. And when the pandemic hit us all, I’m sure you’ve stocked at least a dozen eggs in your pantry.

Here I share with you a fritata recipe that I recently made. My youngest daughter is so fond of eating green peas, my husbands love chili leaves, my eldest daughter loves cheese, and me, I love tomatoes and eggs! Combine them altogether, we have this delicious egg dish that is so easy to make.

Ingredients:

2 eggs
2 tsp green peas (cooked)
1/2 cup milk
1/2 cup cheddar cheese
1/2 cup cherry tomatoes (sliced)
1/2 cup chili leaves
1 small pack Ajinomoto Ginisa
Dash of pepper

Mix all ingredients, pour in your favorite baking dish and bake for 10-15 minutes 180C

Eggs are packed with nutrients that children need for healthy growth and development. It contains vitamins and minerals and all nine essential amino acids that the human body cannot produce on its own, making it an ingredient that can be easily added to other food to enhance its nutritional value. It’s no wonder that it is a favorite of Filipinos as it’s not only nutritious but an inexpensive source of nutrients and easy to prepare especially for busy parents.
