Melon Lychee Almond Jelly Dessert

I love ordering almond jelly when eating out in Chinese restaurants. It’s an easy jelly dessert as it is but I made it more delicate with fresh melons, lychee nata de coco, and a little bit of mint extract to add coolness to the flavors.

This is one affordable dessert that you can serve even in huge gatherings as the ingredients are cheap and can easily be bought from the market.

Use @megaprimequality lychee nata de coco and some of the syrup to make this yummy dessert.

Mega Prime Lychee Nata De Coco

Ingredients:

1/2 sachet of jelly powder (unflavored)
3 cups of water
1/2 cup sugar
1 cup milk
1.5 tsp almond extract
2 medium-sized ripe melon, scooped
1 can Mega Prime Lychee Nata De Coco (drained, but reserve some of the syrup for flavoring)
1 tsp mint extract

How to make:

1. Make the almond jelly but combining water (room temperature), sugar, jelly powder, and milk in a saucepan.
2. Heat the mixture and continue stirring until everything is dissolved. Remove from the fire before the mixture boils.
3. Pour into a rectangular mold and chill until the mixture hardens.
4. Slice the almond jelly into squares.
5. Add the almond jelly in serving cups with the melon, lychee nata de coco, and some of the syrup of lychee.
6. Add some drops of mint extract and mix gently.
7. Let the almond jelly dessert chill for at least an hour before serving.
