#PinasarapNaGulay (1) – Ampalaya With Corned Beef Flakes

I couldn’t think of any other vegetable to start this series with an easy recipe using ampalaya (bitter gourd or bitter melon). I know that it’s not a very popular vegetable for kids but for adults like I am, we love ampalaya.

I didn’t like eating ampalaya when I was a kid but when I got older, I’ve acquired the taste and love any kind of dish with it as an ingredient.

I’m trying to make the same story with my kids when it comes to eating vegetables, starting with ampalaya. They ate a couple of spoonfuls yesterday and it’s an accomplishment for me🤗.

Ingredients:

1 large ampalaya – sliced into thin pieces
1 medium onion – sliced
3/4 cup water
1 medium-sized egg
salt and pepper to taste
1 regular can of corned beef – I used CDO Highlands Gold
3 tbsp cooking oil to fry and make corned beef flakes

To make this dish

Saute ampalaya in onions
Add water and let it simmer. Cover and let the ampalaya be cooked and get softer (don’t mix)
Beat the egg and mix it with the ampalaya
Add salt and pepper to your desired taste
Remove from the pan and transfer to a serving dish.

To make corned beef flakes, fry the corned beef using cooking oil till the liquid is completely dried up.

Top your ampalaya dish with corned beef flakes. Serve while warm.

Nutritional benefits: Bitter melon is high in fiber and low in calories, perfect for those who are watching their diet. It can also lower blood sugar that’s why it’s popular with diabetics. I love cooking this because it is also rich in Vitamin C and A which can really help my kids. Instead of drinking vitamins sometimes, I rather have them eat vitamin-rich foods.
