Cookie Butter Crepe

What can be a better day than starting it with some nice, soft, buttery crepes with your favorite fruit such as fresh strawberries. I was lucky enough to have some stocks of these big, luscious strawberries from Baguio so I topped some slices on cookie butter crepes for breakfast.

To make crepes, standard recipe is here:

Ingredients:

1 cup hotcake mix
2 eggs
1 cup water
oil or butter for greasing pan
cookie butter spread
2 tbsp cookie butter spread warmed and melted a bit using a microwave
powdered sugar for sprinkling
fresh strawberries or any fruit topping that you like

How to make:
Mix the eggs and water to the hotcake mix.
Heat pan in low fire and grease with oil or butter
Pour 1/2 cup of hotcake mixture onto pan to make the crepe. Don’t overfry.
Remove from pan and and cookie butter spread.
Fold the crepe into quarter and pour melted cookie butter on top
Top with fresh fruits and sprinkle with powdered sugar before serving
