Summer’s coming and everyone will be craving for cold desserts such as halo-halo and ice cream topped with ube halaya. And because ube halaya is my all-time favorite dessert, either as a topping or a spread, I found a recipe for an exact replica. Same taste, better texture and no back-breaking cooking involved.
Here’s a recipe how to make a potato halaya and potato halaya dessert float. Enjoy!
Potato Halaya
– Recipe found in Potatoes USA website
Ingredients:
- 480 ml water
- 100 grams US Dehydrated Potato granules
- 40 grams table sugar
- 300 ml condensed milk
- 370 ml full cream evaporated milk
- 2 large egg yolks
- ½ cup butter
- 1 tsp vanilla
- 1 tsp violet color
Procedure:
- Boil water in a pan then lower heat and gradually mix the potato granules.
- Add sugar, condensed milk, evaporated milk and egg yolks while stirring.
- When you reach your desired consistency, add the butter and vanilla and then the food coloring.
- Let the potato halaya cool before storing.
Potato Halaya Dessert Float
Ingredients:
- 1 cup crushed graham crackers
- 1 cup all purpose cream
- 1 pint vanilla ice cream
- 1 cup potato halaya
- 3 transparent glasses/mugs
Procedure
- For the bottom layer, put 1-2 tbsp crushed graham
- Next layer, put 1 tbsp all purpose cream
- Third layer will be 1-2 tbsp potato halaya
- Next layer a scoop of vanilla ice cream
- Repeat layers until you reach the top of the glass/jar
- Top layer should be a scoop of vanilla ice cream with potato halaya over it.
- Dust with crushed grahams.
- Serve immediately.
