Muscovado Oats Lace Cookies

Coffee and tea are my go-to drinks lately, and because of that, I’m usually craving for cookies to munch before my drinks. One of my favorite cookie types is lengua de gato but I don’t know how to make them (maybe next time I’ll try to find a recipe for one) so I thought to make lace cookies instead. I usually make lace cookies for Christmas for snacking while waiting for Christmas eve. This time, I decided to make the cookies healthier by using rolled oats and healthier sugar muscovado.

What I love when baking lace cookies is that you can make a lot of them because they are just so thin so you can have many to eat and lots more to give to others.

Ingredients:

1 stick butter
1 cup muscovado sugar
1 cup rolled oats
1 and 1/2 tablespoon flour
1/2 tsp salt
1 egg beaten
1/2 tsp vanilla

How to make lace cookies

Preheat oven
Melt sugar and butter in low fire
Mix the rest of dry ingredients and egg
When sugar and butter are melted, remove from fire and pour into the dry mixture
Mix everything together until you make a sticky dough
Drop cookie doughs one by one using a spoon on a parchment paper for baking, and separate each one with at least 2-inch space
Bake for 5-10 minutes till done, careful not to burn the cookies (tip: when you see the bubbles form, time at least a minute and put the cookies out and let them cool down before removing.
Let the cookies cool down on a wire rack before eating or putting them in a jar.
