Porky Zucchini Nuggets With Honey Mustard Dip

Most grown up kids I know prefer eating in their school canteen but my kids, I am proud to say that they still prefer to bring food I cook for them as their school baon. Well, partially, it’s because they don’t want to wait in the long line during lunch time, and syempre, because they like the dishes I prepare for them. I admit that I still cook processed or canned foods like hotdog or longganisa for their baon, but as much as possible, I really prepare a week in advance or buy all the ingredients in one grocery shopping so I can prepare them something healthier or iba naman. What I love most that I cook their lunch is because I have the chance to include vegetables without them knowing it. And the easiest way to do it is by making my own nuggets.

I only used a couple of ingredients in this nuggets recipe and they are all vegetables. And because tweens usually prefer savory and tasty dishes, I use PORKSAVOR in this dish. With Ajinomoto PORKSAVOR, the nuggets taste meaty and the tweens don’t have problem eating the veggies in it. The honey mustard dip balances the savory taste with its sweet and tangy taste.

Porky Zucchini Nuggets With Honey Mustard Dip

This recipe has a porky meaty taste thanks to Ajinomoto PORKSAVOR using zucchini and mushroom instead of pork or chicken. Because of the veggies innate texture, the nuggets are soft and chewy in the inside and crispy on the outside because of the breadcrumbs.

  • 1 cup zucchini, peeled and cubed
  • 1 cup button mushrooms, diced
  • 1 large onion, diced
  • 1/4 cup cheddar cheese, cubed
  • 1 pc egg
  • 1/2 cup flour
  • 1 cup breadcrumbs
  • 1 sachet Ajinomoto PORKSAVOR
  • salt and pepper for seasoning
  • 1/2 cup canola oil for frying

For Honey Mustard Dip

  • 3 tbsp mustard sauce
  • 2 tbsp honey
  1. Mix diced mushroom, zucchini and onion

  2. Add the fresh egg and flour and pork savor

  3. Season mixture with salt and pepper

  4. Get 1 spoon of the mixture, roll it using your palms and then roll it on bread crumbs.

  5. Mold the nugget using your favorite mold.

  6. Pan fry and then remove excess oil using paper towel.

  7. For the honey mustard dip, blend the mustard sauce and honey together until you get a syrupy consistency. You can also drip some of this mixture over cooked rice for some flavoring.

You can make 4-5 pcs medium sized nuggets using this recipe, and 6-8 small sized nuggets if you use smaller molds.

* This is a nutritious dish because zucchini is rich in fiber and has Vitamin C, folate and beta-carotene. The meaty taste brought by Ajinomoto PORKSAVOR lessens the need to use more salt (tweens usually like salty food).
