It’s Halloween time once again and it’s only a week from now and my kids are donning some costumes for upcoming Halloween parties. How about you? How’s your preparation going?

Me, I’m busy preparing something for the kids’ treat or treat. Though I’m planning on making chocolate and candy arrangements for the party, I also want to serve something savory and healthy for the kids.

This is a simple recipe using mashed potatoes, cheese and broccoli. Not all kids love broccoli, and when you tell them these bites of goodness contain broccoli, it might be enough to spook them out from eating it. Even so, when they give it a bite, they will surely love the cheesy taste of the mozzarella and the squishy texture of mashed potatoes.

Dip them in your favorite dressing or bloody red ketchup to complete the spooky feel!

US Potatoes Dehydrated Potato Flakes

Ingredients:
2 cups mashed potatoes ( use 1.5 cups of dehydrated US potato flakes with 1 and 1/2 cup warm water)
1/2 cup steamed broccoli, mashed or diced thinly
1/2 cup flour (1/4 for mixing, 1/4 for rolling)
2 eggs
1 whole onion, minced
40 g mozzarella cheese, cubed or shredded
1/5 cup breadcrumbs
1/4 cup milk
salt and pepper for seasoning
cooking oil for deep frying

How to prepare:

Combine mashed potatoes, onions, broccoli, 1 egg, flour together
Mix everything gently and then season with salt and pepper
Roll 1-2 tsp mixture into a ball and push mozzarella cheese in the middle.
Make 15-20 balls using the mixture.

Put remaining flour into a plate, and breadcrumbs into another plate
Whisk 1 egg with milk
Roll 1 mashed potato ball onto the flour and brush off excess.
Dip the ball into the egg mixture, and then roll on to the breadcrumbs.
Repeat until you have all the mashed potato balls covered.

Deep fry the potato balls to make your croquettes.
Cool them down for 5-10 minutes before serving with your favorite dip/dressing.
