When I was younger, I’ve always thought that fruit salad is the only kind of salad in the world. I always look forward to Christmas because of fruit salads. When I became a mom and you are given the task of preparing something different for your family at least monthly, I think I’ve seen a hundred different kinds of salad already. But of course, being a work at home mom, I often look for 5-ingredient max recipes or else, I’ll take the recipe as complicated and discard it right away.
To cut it short, I’m sharing with you my own recipe for a quick waldorf salad. If you love potatoes, this salad is for you. Potatoes by the way are rich in vitamins and minerals which include thiamin, riboflavin, folate, niacin, magnesium, phosphorus, iron. Waldorf salad uses mostly potatoes so it will be a very healthy dish for your family.
What is Waldorf salad?

A Waldorf salad is a salad generally made of fresh apples, celery and walnuts, dressed in mayonnaise, and usually served on a bed of lettuce as an appetizer or a light meal.[1]
Ingredients
- 6 pcs potatoes (peeled and cubed)
- 1 pc red apple, cubed
- 2 leaves of Kale , cut to little pieces
- 1/2 cup Jolly Mayonnaise
- 1/2 tsp of Doña Elena Olive oil
- iodized salt for seasoning
Instructions
- Boil cubed potatoes (what I do to conserve energy is that I put my cubed potatoes on top of rice cooker as I cook our rice for dinner).
- Mix all the other ingredients.
- Put in a salad bowl and let your salad get chilled before eating. My husband likes the salad when the potatoes are still warm but actually they are meant to be eaten cold. This will also be perfect to be paired with fried dishes such as chicken and pork, sort of a side dish.
- If you don't have kale leaves (I heard they sell kale leaves in Healthy Options), you can use your favorite herbs in replacement like cilantro, basil or parsley, or even some onion leaves if you like to put some onion spice on your salad).
