Quinoa Garlic Mushroom Dish

What is quinoa? Pronounced as “keen-wah”, quinoa is a type of crop in which seeds are edible just like rice. Because I’m a rice lover, as well as my whole family, and time and time again we have to remember that white rice contains lots of sugar, I had to find alternatives to rice that I can incorporate in our daily menu.

Since the kids will be at home because of an early vacation (I don’t want to use the recent announcement of “lockdown” in Metro Manila as a reason since I tend to hyperventilate when I think about it), I thought this is the perfect time to start using or adding quinoa in our meals.

Ingredients:

3/4 cup cooked quinoa grains – you can cook quinoa seeds like rice with 1 part quinoa/2 parts water ratio
1 tbsp olive oil
1 cup mushrooms with stems
1 clove garlic
dried thyme for flavoring

Saute garlic in olive oil, add the mushrooms. When mushrooms are tenderly cooked, add quinoa. Add salt and pepper and then thyme. Add enough thyme and seasoning according to taste.

That’s it. You can add parmesan on top of your dish before eating.

I love this dish because I can substitute it for rice and I can easily feel full enough after eating 4-5 tablespoons. For now, my kids eat only 2-3 spoons with my push but I know that if they get to be acquainted with the taste and with my encouragement on how good quinoa can do for their health, they will learn to appreciate these grains and eat more of it.
