#ALASKAkaibangSummer recipe – Eggnog Melon Summer Dessert

Summer is almost over and I want to take advantage of the abundance of fruits that are quite cheap during this season, melons included. I can easily eat one whole melon in one sitting, but if I’m in the mood, I just slice them and chill them before serving for snacks or after meals, or I scrape melons to make melon juice.

Thanks to Alaska for giving me this chance to make an elegant chilled dessert, one that’s super nakakabusog because there’s pudding and eggnog, and super yummy because of Alaska condensed milk. What’s not to love if you combine melon and condensed milk, right? You can eat this pair as they are but you can also make fancy dessert to surprise your loved ones from time to time.

Just like this one I made. My husband and kids know that I’m in the mood to impress when I do dishes and desserts like this. And I indulge myself with happiness looking at them enjoying their dessert.

Eggnog Melon Summer Dessert

Ingredients:

1 whole melon – scoop out the flesh
1/2 cup vanilla pudding *
1/2 can Alaska Condensed Milk
1/2 pack eggnog biscuits

*For the vanilla pudding, you can buy your own or make your own. I prefer to make mine and here’s how :

Mix 1/3 cup sugar with 2 tbsp cornstarch, 1 cup of Alaska Evaporated Milk and 1 cup fresh milk. Heat this mixture in low heat until it thickens. Add 2 egg yolks while stirring constantly, then add in 2 tbsp melted butter and 2 tsp vanilla. Yield is 2-3 cups of vanilla pudding (depending on how big your cup is).

Layer your ingredients in a glass – eggnog, pudding, condensed milk, melons and then repeat until you fill up the glass. Chill your dessert before serving. When you eat this dessert, there’s a lot of texture and sweetness that you’ll experience, eggnog still slightly crunchy, creamy and sweet condensed milk, soft and smooth pudding, and then refreshing melons. Isn’t this the perfect dessert?
